Walnut oil

Known since ancient times, walnut oil was long considered the fat of the poor. It is only in the last fifteen years or so that it has become an elegant condiment. In Paris in the 12th and 13th centuries, it was used as much for frying and salads as for filling... oil lamps!
Walnut oil is the result of a long process. The nuts are harvested in autumn and then dried on racks in barns or attics, away from the damp. They dry naturally. The shells are then broken with a mallet to extract the kernels. The kernels are then ground to a paste using a huge grinding stone. The paste is gently heated in a pan to a temperature of 50°C. It is then placed in a press where, under the pressure of the ram, the oil is slowly extracted, perfuming the entire oil mill with its fragrance.
Five kilos of dry walnuts yield 2 kg of kernels and 1 litre of oil.

When it comes to Périgord, we're particularly spoilt... Who hasn't heard of Périgord truffles, or foie gras from the south-west?

That's why we've decided to offer you a range of products, on the premises of the Moulin de la Jarousse, in partnership with local producers.

First and foremost, there's duck: foie gras, rillettes and pâtés from Maison Coulaud.

But that's not all: we've discovered a delicious local beer that we'd like you to discover. Beer is brewed not only in Belgium and the Netherlands, but also in the very heart of Périgord.

Finally, we produce our own walnut oil: discover this exceptional product of which we are very proud!
